Vege-licious chef and owner, Bettina Thomas shared her recipe for a delicious vegan soup with Chanel 5’s Lelan Statom on Talk of the Town during their “meatless Monday” segment on Feb. 24, 2020.
The soup is a sweet potato and collard green soup filled with flavor and so hearty it’s like a vege stew!

Vege-licious Vegan Soup
Ingredients:
1 Tbsp coriander
1 tsp cumin
4 bay leaves
1/4 cup oil
6 oz can tomato paste
1 sprig fresh thyme
1 sprig fresh rosemary
1 tsp paprika
1/4 tsp cayenne pepper (optional)
1 quart vegetable broth or water
6 garlic cloves
3″ piece of fresh ginger (finely chopped)
1 cup almond butter
2 sweet potatoes, diced
1 large onion, chopped
1 bunch of collard greens, trimmed
1 small container of cherry tomatoes
salt and pepper to taste
Directions:
Blend ginger, garlic and almond butter in water (or broth if using). Add first nine ingredients to stock pot. Add sweet potatoes, onion, collards and whole cherry tomatoes to the pot. Stir in blended ingredients. Add salt and pepper to taste. Simmer until sweet potatoes are tender, 10 to 15 minutes.
